Preheat oven to 350°. Spray the tin with a cooking spray or line with muffin cups.
In a large bowl combine oats, condensed milk, vanilla, salt, and coconut. Mix well with a wooden spoon.
Using a smaller spoon, fill the muffin tins with the granola mixture. When each cup is full, use the flat end of the spoon to firmly press down and shape the granola into a cup so it looks like a little bowl.
Bake at 350° for 15-18 minutes. Keep an eye on the granola cup edges. Once they start to brown, remove the muffin tin from the oven.
Allow the granola cups to cool almost completely before removing from the tray. Store extra cups in a sealed container at room temperature. Keep for up to 1 week or freeze up to 3 months.
To serve, scoop yogurt of choice into the granola cup and top with fruit and any additional toppings. Encourage little hands to get involved and create their own breakfast masterpiece!
